What happens when Jordy Navarra and Johanne Siy cook up a feast together? Expect nothing less than a journey beyond your wildest gastronomic fantasies. Navarra, the beloved chef behind Toyo Eatery and Siy, one of Asia’s most celebrated female chefs have broken new ground—serving up fearless flavors that push the limits of Filipino food. Their co-conspirator? Rachel Carrasco, the Founder and CEO of all-bacon snack Baken. Yes, you heard right—bacon is on the fine dining menu, and it’s never tasted this good.

Founder and CEO of Baken Rachel Carrasco “Baken 1104 is a warm salu-salo in our ’home’, where the rich flavors of Filipino culture come alive in every bite, and the spirit of a fiesta brings everyone together,”

Baken 1104 is the brand’s flagship dining experience, set against the backdrop of Toyo Eatery. Navarra, Siy, and Carrasco celebrate the everyday magic of meals rooted in home—the kind prepared with quiet mastery from recipes passed from one generation to the next. Their multi-dining experience is a thoughtful ode to this universal memory we all share: a diaspora of flavors that radiates warmth, reflects kinship, and reimagines nostalgia with a fresh, savory edge.

Behind 1104

1104 is dedicated to where it all started for Carrasco—the postal code of the very first research and development house where her signature bacon first sizzled. Fast forward to now, Navarra and Siy transform Baken’s lineup into a three stage tasting trail that integrates the flavor profiles of snacking into high-concept cuisine.

“It’s about exposing ourselves to different perspectives and finding inspiration in diverse cultures.”, Chef Navarra speaks on the power of playing with the flexibility of Filipino cuisine. Backing him up, Chef Siy asserts, “It’s about time we push Filipino culinary innovation to the fore.”

Only a visionary founder and and two culinary pioneers could bring this concept to life with such precision and flair

Here, you’ll be treated to a refreshing twist of Filipino classics and snacks courtesy of Chef Siy. Baken’s Bacon Jam forms the tasty base to an even tastier sawsawan. Chef Navarra then produces his mouthwatering take on comfort food with Baken: Pancit Habhab, and Banaue Malagkit Rice with polvoron and Baken’s Bacon Cookies. For the finale, you can expect a wonderful assortment of dried seafood all given a savory touch from Baken’s signature flavors. Think pinindang, fish tocino, fish bones, and kalkag made tastier by Baken’s Real Bacon Crisps.

The food prepared at Baken 1104
Food that is at once sensational, and bold in its fresh choices

Baken 1104 was created to defy convention. In Carrasco’s bold vision, bacon is elevated from comfort food to culinary art, earning its place at the fine dining table. Chefs Navarra and Siy bring that to life with finesse, crafting a menu that pushes the limits of true indulgence. It also goes beyond the bold flavors—it’s a daring celebration of innovation grounded in the simple roots of Filipino food.
