When host and caterer Happy Ongpauco-Tiu set the table for this issue’s shoot and article, she made sure to include poinsettias. “I chose fresh poinsettias as the centerpiece because they capture the essence of Christmas beautifully. Their vibrant hues not only bring a festive spirit but also last long , ensuring that they remain pretty throughout the holiday season.
To enhance the tablescape further, I drew from my love of sustainability by repurposing decorations from my previous Christmas tree. Instead of purchasing new decor, I created wreaths that I scattered across the table, adding texture and depth to the scene.”

Ongpauco-Tiu, who has been a host for at least 20 years and a caterer for ten, says she enjoys hosting more than catering. “While catering allows me to showcase my tablescape and culinary skills on a larger scale, hosting creates personal connections. Seeing firsthand how my food brings people together is incredibly rewarding.” Building connections and watching people make connections is one of the rewards that she looks forward to. “At its core, hosting is about sharing love—not just through food, but through the entire experience. It’s an opportunity to bond with people special to me, creating a space where they feel safe, valued, and cherished. Hosting isn’t merely just putting together a meal; it’s about sharing your heart and valuing relationships that turns an ordinary evening into a ‘HAPPY’ memory.”
She further states that one of her favorite memories is hosting a surprise dinner for her mentors. The joy of cooking for those who inspired her is something she cherishes and describes as “monumental. I prepared their favorite dishes and, seeing how they enjoyed the whole experience, reminded me of why I love hosting so much.”

She says that hosting and catering have crossovers, with both roles requiring an understanding of flavors, timing and presentation. As a host, she says, one curates the overall experience to their personal preference. As a caterer, one designs a menu and creates according to the client’s liking. “The main goal they have in common is the essence of creating happiness through food,” she emphasizes.
When asked about a dream hosting experience she’d like to have, she first mentions that “a good host is one who can make each guest feel celebrated and valued. It’s important to personalize the experience, tailoring elements to resonate with your guests’ preferences. The secret lies in small gestures like custom place cards or a signature cocktail that carries a personal touch. When your guests feel appreciated, it becomes a memorable occasion rather than just another meal.” She has often daydreamed about hosting a picturesque gathering in the South of France, surrounded by lush vineyards. “I will have a long, rustic table set outdoors under the dappled sunlight, surrounded with wildflowers and glowing lamps. The menu would be curated from the freshest produce sourced right from local farms, and I would bring the taste of Provence straight to the table!”

She also states that you can tell you’ve been a good host when your guests are happy, laughing and enjoying in general. And to her, creating an unforgettable party involves engaging all five senses—from the visual of a pretty tablescape to delicious aromas from the kitchen.
She lists them down:
1. Sight – A beautifully set table
2. Sound – The ambiance should resonate with gentle background music that complements the mood. A curated playlist can elevate the experience.
3. Touch – Incorporate varied textures through linens, utensils, and decor.
4. Taste -This is what i enjoy most! Creating a delicious well-balanced feast with authentic flavors, seasonal ingredients, and food from the heart makes the guests and their tummies happy!
5. Smell – Aromas set the tone—Inviting scents can make a setting feel warm and welcoming.
“I believe that personal style is the heart of hosting. My approach is timeless and classic, but I always add a flair that reflects my personality and the essence of the occasion. Think elegant table settings that combine beautiful china with vibrant, unexpected centerpieces. It’s about creating a masterpiece that feels both sophisticated and welcoming. Whether it’s the beautifully patterned napkins or colorful centerpieces, it’s those small details that leave a lasting impression.”
