The origin of Nightcap Manila traces back to a shared passion for great drinks and meaningful experiences, a vision that took root during the pandemic. “The pandemic was a time when everyone was forced to slow down, and for us, it became an opportunity to dive deeper into our shared love for great drinks and great company,” says Aira So, one of the three co-founders of Nightcap Manila. Alongside Jamille Chua and Klaire Chua, So and her team sought creative ways to stay connected during the lockdown. “We were experimenting with wine tastings, liquor pairings, and ultimately, cocktail-making sessions—anything to recreate those shared moments of joy and connection.”

This experimentation led to the creation of Nightcap’s cocktail kits, which featured pre-measured ingredients, carefully crafted recipes, and unique glassware. “We wanted to create something different—something that was about balance, strength, and aesthetics,” So explains. “At the time, most cocktails in Manila were juice-heavy, so we made sure our kits focused on premium ingredients and beautifully executed drinks.” The attention to detail was a hit with customers, providing them with an interactive and elevated experience that went beyond the ordinary.

When restrictions were lifted, the vision for Nightcap grew beyond cocktail kits. So reflects, “We realized our vision went beyond just kits—we wanted to bring the craft cocktail experience directly to people’s events.” Nightcap Manila’s premium mobile bar service was born out of this desire to make every celebration feel more elevated and personal. “We saw a gap in the market,” she shares, “and we wanted to fill that gap by providing a service that would make events feel truly unforgettable.”

This helps us create a cocktail that is not only visually stunning but also a seamless representation of the brand.” She adds, “We ask questions like: What aspects of the company or event do they want to highlight? What mood should the cocktail evoke? This helps us curate both the flavor and presentation, ensuring it aligns with the event’s theme and messaging. From spirit-forward to zero-proof options, we carefully select the ingredients and visual elements to create a cocktail that represents the brand while standing out as an experience in itself.”

They used cashew marzipan as a garnish—a tribute to the Renaissance, where marzipan was a traditional delicacy. Instead of almonds, cashews were used to highlight local ingredients, and the marbled texture echoed the era’s architecture. For a Shiseido event, a meringue garnish was crafted to resemble a dollop of face cream, aligning with the brand’s beauty and skincare focus.

She recalls one particularly memorable moment with a couple who worked in technology abroad wanted a cocktail that reflected both their love of gin & tonics and their connection to local flavors. “We created ‘Fortune Teller’—a mix of pomelo, lime, gin, elderflower, and tonic,” So shares. The name came from a special moment in their relationship, when they visited a fortune teller early in their romance. The couple loved the drink so much they asked for the recipe, hoping to serve it at future gatherings as a reminder of their story.

Another unforgettable moment involved a couple who wanted a drink that captured the essence of their hometown, Bacolod. Nightcap crafted a Mango Napoleones-inspired cocktail, using mangoes to symbolize their wedding at a mango farm. “They were amazed at how a drink could evoke such a strong sense of nostalgia and home,” So recalls. “It was the perfect way to bring their personal history into their celebration.”

She continues to say, “There’s a certain magic in seeing how an ingredient, a story, or an aesthetic can translate into a cocktail that truly fits an event or a person.” Crafting a new cocktail isn’t just about combining ingredients—it’s about balancing flavors, textures, and presentation to evoke an emotion or tell a story. “To keep things fresh, we constantly experiment with flavors, techniques, and presentation—playing with infusions, unique flavor pairings, and even interactive elements that make each cocktail an experience in itself.”
